Eva Gotiti Wet Coffee Processing Station is a washing facility located in the Gedeo Zone of Southern Ethiopia, in Gotiti Kebele, Gedeb Wereda. Sitting at a high elevation, the station was set up in 2022 on a two-hectare plot and has been growing ever since. Plans are already in motion for future upgrades, including artificial dryers, solar tunnels, underground water sourcing, and expanding the site.

The station employs six full-time staff, six seasonal workers, and around 244 temporary workers during the harvest. Each year, it processes about 500 to 600 tons of coffee cherry, sourced from 868 local farmers who grow varieties like 7454, 74110, 7440, and 74112.

Eva Gotiti is serious about traceability and sustainability. They track everything from the farm to export, carefully manage water use, and separate pulp from wastewater. They also give back to the community by offering coffee seedlings, supporting farmers in need, and paying quality-based premiums to growers.

Here’s how the washed process works at the station:

  1. Cleaning – Remove leaves, stones, and other debris.

  2. Washing – Rinse the cherries with clean water.

  3. Pulping – Separate the beans from the fruit.

  4. Fermenting – Beans are soaked in tanks for 12 to 16 hours to break down the mucilage.

  5. Second Washing – Beans are rinsed again.

  6. Drying – Beans go onto raised beds, turned often, and covered during the heat of the day and overnight. Drying usually takes 10 to 14 days.

  7. Storage – Once fully dried, parchment is packed and stored for about 20 days. Lots are kept separate until they’re cupped and graded.

All these efforts come together to ensure high-quality coffee and strong, lasting relationships with the farming community.
